I have done guacamole for a while and I can personally give these valuable advice:
- Avocados must be perfectly ripe;
- Chop extremely finely all ingredients until it becomes a sauce;
- DO NOT USE ANY BLENDER! Very important, otherwise taste changes completely. I personally use a Seki Magoroku Chef Knife which is perfect for this application: [ Ссылка ]
- I personally add a little bit more onion then necessary. It gives a better taste, but this could disagree with some people stomach :)
