Tonic syrup:
1/4 grapefruit, 1/4 orange, 1 lemon, 1 lime,
1.75 oz chopped lemongrass, 1 oz white vinegar,
2 oz maple syrup, .5 oz cinchona bark, 5 allspice
berries, 5 cardamom pods, 1 star anise, pinch of
salt and pepper, .5 oz elderflower, .25 oz dried
elderberry and 300 ml water.
Add all ingredients to a jar and let sit in refrigerator
for 1-3 days.
Pour all ingredients into a saucepan and
bring to a low boil. Cover and simmer for 15-20
minutes. Remove from heat and let cool. Strain
mixture through a cheesecloth into the jar (make sure to
squeeze after straining to ensure all liquids are
collected). Discard solids. Seal jar and refrigerate.
