PA Dutch Montgomery Pie
WET or LIQUID INGREDIENTS:
¼ cup Brown Sugar
¼ cup White Sugar
1 tablespoon Flour
1 Large Egg @ room temperature
½ cup Molasses (light blackstrap or King’s Syrup)
1 Zest and Juice of a Lemon
½ cup Boiling Water
DRY INGREDIENTS or CAKE BATTER
4 tablespoons Margarine or Butter @ room temperature
½ cup Brown Sugar
½ cup White Sugar
1 teaspoon Vanilla
1 Large Egg @ room temperature
1 ¼ cups Flour
2 teaspoon Baking Powder
½ cup Sour or Buttermilk (add 1 teaspoon of vinegar to white milk)
½ teaspoon Salt
1 pie crust Pillsbury works, or make your favorite homemade dough
Directions: Mix wet ingredients--molasses, lemon zest and juice, boiling water, egg, sugar and flour in a mixing bowl. Set aside.
Mix dry ingredients—blend sugar, salt, vanilla, egg, butter, and milk with flour and baking powder to form cake batter. Set aside.
Grease pie plate. Roll out dough into pie plate. Flute edges, Prick holes into dough with a fork to avoid large air bubbles in dough.
Pour cake batter into pie dough. Pour wet ingredients over-top of cake batter. Bake at 350 degrees for 30 minutes. Liquid will sink to the bottom, and batter will float to the top. Line oven with aluminum foil to catch drips. Cut and serve when cool. Enjoy.
