WATERMELON GAZPACHO

Fed up of summers? How about a soup? It does sound crazy, right?
Just Have a look at this pretty watermelon, cucumber and tomato gazpacho, that’s cold, savory, subtly sweet and spicy and super refreshing soup! Gazpacho is, traditionally, cold Spanish soup that’s made with tomatoes & salad vegetables- seasoned with some basic spices. Here it's made with watermelon. It does seem an unusual combination but DO TRY it once. The delicate flavors of cucumber and watermelon go hand in hand to create a sweet-and-savory chilled soup, perfect for summers.
It is low carb & fills you up so can be swapped with lunch if you are on a diet.
INGREDIENTS
• 300g Watermelon (Cubed & deseeded)
• 1 Ripe Tomato (deseeded)
• 1 small Cucumber (Peeled & deseeded)
• 1 Fresh Red Chili (Preferably Serrano Pepper, deseeded)
• 1 Quarter of a small Onion
• 2 Tbsp Lemon juice (Freshly squeezed)
• 2 Tbsp Olive Oil (more for garnish)
• 1/3 Tsp salt (adjust as per preference)
• ¼ Tsp Ground Peppercorns
• 3 Tbsp Crumbled Feta / Cojita Cheese
• Some Cilantro leaves for garnish
METHOD

TIPS
• You an make the soup ahead of time & garnish right before serving.
• If you need it make it instantly try using cold fruits or toss in a few ice cubes.
• You can use croutons, more salad vegetables, Olive oil As toppings.
• Some Mint can be added while blending.
• Omit the cheese or add a vegan substitute for a vegan & dairy free watermelon Gazpacho.
