High Protein Cheesy Chicken Tacos!
These are some of the best tasting tacos i’ve made, they’re so simple, easy and look just like birria tacos. With incredible macros and great for meal prep🤌🏽
Macros per Taco (6-8 tacos depending on the amount of filling per taco)
230 calories - 25g protein | 18g carbs | 6g fat
🛒 Ingredients (for 6-8 Tacos)
For the chicken:
• 2 Chicken breasts cut in halves (giving you 4 thinner pieces)
• Season both sides generously with Oregano, garlic powder, Paprika, onion powder, chilli flakes, salt & pepper
• 1-2 tsp olive oil
Veggies:
• 1/2 red and green bell pepper (chopped)
• 1 red onion (chopped)
• 1/2 the amount of seasonings used for the chicken
• 1 can chopped tomatoes
• 1/4 cup water
For the tacos:
• White or yellow corn tortillas (Brand I use is Mission)
• Roughly 60g chicken per taco
• 10g shredded mozzarella per taco
• Garnish with coriander and lime

Direction for cooking:
- Cook the chicken on medium to low heat for 3-4 mins each side. Make sure the seasoning doesn’t burn
- Cook the veggies for 5 mins before adding the canned tomatoes
- You can fill the tacos as preferred, toast each side for about 1-2 mins on low heat to get some good char
