Delicious one-pot vegan carrot soup recipe. So easy and healthy too. My favorite way to eat carrots !
INGREDIENTS
- 2 servings
500g carrots, cut (4 small carrots)
2 tablespoons olive oil
1 small red onion, sliced
1 tablespoon ginger, chopped
a pint of water
1 teaspoon salt
1/2 teaspoon curcumin
1/2 teaspoon italian mixed herbs
1/4 - 1/2 teaspoon white pepper
METHOD
1. In a large pot, heat the olive oil over medium high. Cook the onion and ginger for 3 minutes.
2. Add the carrots, cook for 3 to 5 minutes.
3. Add water, salt, curcumin, herbs and pepper. Simmer until the carrots soften, for about 20-30 minutes.
4. Remove the pot from heat, blend the carrots with a hand blender until smooth.
5. Serve topped with fresh mint.
6. Enjoy.
