Recipe:
Burrito: Makes 6 Burritos
Ingredients: Package of Organic Whole Wheat Tortillas (Burrito Size)
Filling:
Rice:
2 cups cooked basmati or brown rice - cook with 1 teaspoon turmeric 1 cup peas - 1/2 cup almond slivers or cashew pieces & salt
2 cups Seitan - veggie meat - tofu or tempeh. Cut in thin strips.
Plant based cheese
Kite Hill plant based sour cream
2 cups chopped spinach - no stems
Directions: Preheat oven to 375 F
In a bowl place cooked rice. Fold in cheese and spinach - mix well.
To prepare seitan or whatever you choose - 1/2 cup peanut sauce whisked together with 1 teaspoon sesame oil - air fry ten minutes on high or use a skillet until browned
Lay down tortilla - place rice - then sour cream - then seitan or substitute - add more cheese and fold (youtube videos teach how to fold a burrito)
Put in oven for 20-25 minutes until burrito turns golden brown
Broccoli & Dressing
Ingredients:
4 cups broccoli (see how I cut them in video)

1 cup raw almonds
1 cup nutritional yeast
1/4 cup organic cold pressed olive oil (optional)
2 cups spring water
1/2 teaspoon sea salt
4 tablespoons Bragg Liquid Aminos
Blend together in a high speed blender
Pour on top of steamed broccoli - serve with burrito!
