Made in the traditional way -- the oranges are bought in early January from Signora Fraga from an orchard just outside seville -- Rosebud have bought from her since 1990.
The fruit is bought fresh -- never canned like most other manufacturers as we believe that this always leaves a slight metallic taste in the mouth which indicates that something has been canned which cannot be disguised even with sugar.
Rosebud buy four or five tonnes which are delivered by truck, so all the growing end stalks can be individually removed by hand, washed -- air dried, bagged up into small amounts so that they can be frozen and stored until they are needed for cooking each small batch.
The oranges are cooked for about three hours, brought to the boil and gently simmered, once Elspeth has tested them to make sure that they have reached the perfect cooking point they are allowed to cool, and the water is separated from the fruit.
The team then halve all the oranges by hand, scoop out the pulp and pips which is saved to make natural pectin.
The next stage involves using all of Elspeths experience to make five boiling's, which are boiled for about an hour when Elspeth decides the magic moment to jar.
This leaves Rosebud with a product which has been made with completely natural ingredients, by hand, without the addition of any commercial pectins, or canned fruit.
