In this post, I want to show you how to turn your braid into a pretzel challah.
Oh my… my family devoured it in the blink of an eye;
that’s how good it is.
Please see the recipe below (for 2 loaves) ⬇️⬇️⬇️:
• 1000g flour
• 470g water
• 4g dry instant yeast
• 200g sourdough starter
• 20g salt
• 80g sugar
• 70g butter
For the lye bath:
• 900g water
• 30g lye
Mix, divide into 8 equal portions, round them, move to the fridge overnight, shape, proof for 40 min, fridge for 20 min, lye bath, and bake at 190°C for 20 min.
