You may be here reading this and wondering to yourself, why have I only just decided chicken tacos are what is needed in my life? I’m no expert but I think you may have had what some like to call an epiphany.
No matter how or why you are here, you love tacos and you want to know how to make these ones. From the seasoned and charred chicken, and the charred corn salsa that adds freshness to the taco, then topping it off with my avocado crema that is amazing . As with all of my recipes I run through the selection, preparation, seasoning, BBQ set up, times and temps, so you can recreate this recipe at home.

Main Ingredients:
1 kg (2.2lbs) of boneless and skinless chicken thighs
30 grams of taco spice mix
⅓ cup of extra virgin olive oil
10 x small Corn Tortillas
Charred Corn Salsa Ingredients:
2 corn on the cobs (charred)
4 medium to large tomatoes (Juice and seeds removed and diced)
1 green capsicum (diced)
¼ a red onion (diced)
¼ cup of coriander (roughly chopped)
½ teaspoon of salt flakes
¼ teaspoon of coarsely ground black pepper
Avocado Crema Ingredients:
1 avocado
150 ml of sour cream
Juice of one lime
¼ cup of coriander
1 clove of garlic
¼ teaspoon of cumin
¼ teaspoon of salt flakes
¼ teaspoon of coarsely ground black pepper
