Got some eggstra Easter 🪺 eggs?
Mexican deviled eggs are a two bite wonder to elevate your leftover eggs
🐣 Recipe can be doubled, and adjusted to how many eggs you want to make:
Mexican Deviled Eggs
Makes 6 pieces
3 hard boiled eggs
2 heaping tbsp sour cream (or more if you desire more creaminess)
Zest and juice of 1/2 lime
Generous pinch of salt
1/4 tsp ground cumin
1/2 jalapeno diced and seeded
2 tbsp diced chives (or scallions), plus more for garnish
Paprika or chili powder for garnish
-Slice eggs in 1/2 lengthwise
-Pop egg yolks into bowl
-Mix in all remaining ingredients and mash with a fork
-Taste egg yolk filling and adjust for seasonings
-Divide filling amongst egg whites
-Sprinkle with paprika or chili powder, and garnish with additional diced chives
