Calvin Eng of Bonnie’s in Brooklyn is in the Munchies Test Kitchen making his inventive twist on an elusive fast food classic: a Cantonese-inspired char siu McRib. Based on the McDonald’s sandwich, this version features a classic Cantonese char siu preparation that consists of barbecuing pork and flavoring it with a red-colored sauce. Calvin’s sandwich is made with pork ribs and is marinated with his mixture of flavorings like hoisin sauce, ginger, fermented red tofu, malt sugar, and more.
