[RECIPE BELOW] Microwave Peanut Butter Cake.
Come on, I know you've been here; you've wanted a whole cake but you cannot be BOTHERED to cook something properly. PEANUT BUTTER CAKE IN THE MICROWAVE!
This is honestly one of my favourite cakes already. It's very high fat, it's stodgy, it's peanut-ty, it's not very sweet - it's beautiful with custard or a keto friendly jam! It reminds me of the jam sponge cakes I use to have in school.

INGREDIENTS:
- 140g (5oz) Peanut Butter (CHECK CARBS BEFORE BUYING)
- 140g (5oz) Salted Butter
- 4 Eggs
- 200g (2 cups) Almond Flour
- 1/4 cup Sweetener (I used Erythritol)
- 2 tsp Baking Powder
- 125ml (1/2 cup) Water
METHOD:
1. In a large bowl, add the peanut butter and salted butter. Place in the microwave and heat until melted, approx 1 minute.
2. In a medium bowl, add the almond flour, sweetener and baking powder.
3. Then mix the dry ingredients into the melted butters. Once combined well, add the eggs and water. Mix until your batter is nice and smooth.
4. Prepare a medium, microwave safe, casserole dish by grease it (I used Coconut Oil Spray). Pour in the batter.
5. Microwave for approx 7-9 minutes. (My microwave is 1000w and took 7 minutes)
It is easiest to start checking whether it’s cooked after around 5 minutes by poking the middle with a toothpick - if it comes out "clean" your cake is ready.
