Chicken Shashlik Gravy

Ingredients:
Chicken breast or thighs, cubed ½ kg

For Marinade:
Yogurt 1/4 cup 
Worcestershire sauce 1 tbsp 
Soy sauce 1 tbsp 
White vinegar 1 tbsp 
Sugar 2 tsp 
Red chili flakes 1 tsp 
Paprika powder 1/2 tsp 
Black pepper 1/2 tsp 
Sea salt 1 tsp 

For The Sauce:
Tomato ketchup 1/4 cup
Tomato paste 3 tbsp 
Chili garlic sauce 1 1/2 tbsp 
Soy sauce 1 tbsp 
Distilled white vinegar 1 tsp 
Sea salt 1/2 tsp 
Sugar 1/2 tsp 
White pepper powder 1/4 tsp 
Water 1/2 cup 
Corn flour 2 tsp 

For The Shashlik:
Oil 1/4 cup 
Chopped garlic 1 tbsp 
Chopped ginger 1 tbsp 
Onion, 1” squares 1 
Green capsicum, 1” squares 1 

Method:
Combine the chicken with all the ingredients listed under ‘Marinade’. Set aside. Whisk together all the ingredients listed for the ‘Sauce’ and set aside. Heat 2 tbsp oil and add the garlic and ginger. Sauté until fragrant. Add the chicken with its marinade and stir-fry until it changes colour. Add 1/4 cup water and bring to a boil. Set aside when done. In the same pan, heat the remaining oil. Add the onion, capsicum and salt. Stir fry few minutes and then pour the sauce and chicken onto the vegetables and stir until thickened. Serve hot.

Biscuit Blondies

Ingredients:
Butter 175 gm
Light brown sugar  200 gm
Caster sugar  125 gm
Custard powder  4 tbsp
Eggs  2
Vanilla essence 2 tsp
Flour  250 gm
Baking powder ½ tsp
Salt a pinch
Cream biscuits 15, roughly crumbled
White chocolate  150 gm, chopped

Method:
Melt the butter, light brown and caster sugars and custard powder in a saucepan. When the mixture is smooth, take off the heat and leave to cool for 5 minutes. Stir in the eggs, one by one, followed by the vanilla essence, flour, baking powder and salt. Stir in few of the broken cream biscuits and the white chocolate chunks, and put into a greased and lined tin. Scatter over the remaining biscuits and bake at 180 degrees C for 30 minutes until golden and set on top. Cool the blondies in the tin before cutting into bars.
