The dough (see full video for kneading/rest time)
300g/1.75 US cups of flour
2 tsp of active yeast
1 tbsp sugar
200ml/6.75 oz of water
The filling:
400g-500g ground meat
1 star anise pod
2 tsp of sichuan peppercorns
2-3 slices of ginger
Long green onion
Green bunch onions
3-4 rehydrated shiitake mushrooms
3 tbsps of soy sauce
1 tbsp of dark soy sauce
1 tbsp of oyster sauce
1 tsp msg
Sprinkle white pepper
Chinese five spice
A drizzle of oil
