How to cook Thai red curry with chicken
Here is an easy and tasty recipe for Thai red curry with chicken, you can substitute the chicken for beef or pork if you prefer.
Ingredients
oil 2 tbsp
Red curry paste 3 ½ tbsp.
Coconut milk 1 ½ cup
Chicken 400 g.
Water 1 cup
Fish sauce 2 tbsp. or salt 1 ½ tbsp.
Sugar 1 ½ tbsp.
Bamboo shoot 250 g
Kafir lime leaves 3-4 leaves
basil 1 hand full
1 medium sized capsicum
1. Heat oil in a wok over medium heat
2. Add curry paste and fry off until fragrant(about 1-2 minutes)
3. Add 1 cup of coconut milk leaving the rest for later, cook for 2-3 minutes
4. Add 400 grams of sliced chicken breast, stir whilst cooking
5. After about 2 minutes add 1 cup of water
6. Bring to a boil then reduce heat and simmer for 2-3 minutes
7. Add lime leaves, fish sauce and sugar
8. Add the rest of the coconut milk and return to boil then simmer for a further 2-3 minutes
9. Add bamboo shoots
10. Add sliced capsicum
11. Simmer for a further 2-3 minutes
12. Add basil, stir in and serve
