treat yourself with a soft and chewy ube mochi

hi everyone 💖 if you're looking for a light snack or dessert (though it's hard to stop at just one) then this recipe is perfect for you. making ube can be a long process but it's definitely worth it in the end! the best part is if you get too lazy to make the mochi you can enjoy the ube on its own.
ingredients (8 pieces mochi)
ube [makes enough for ~50 pieces mochi]
908g grated frozen ube (2 x 16 oz packages)
110g unsalted butter (½ cup)
175ml coconut milk (¾ cup)
300ml condensed milk (1 ¼ cups)
175ml evaporated milk (¾ cup)
mochi
115g mochiko sweet rice flour (¾ cup)
35g sugar (2 tbsp + 2 ½ tsp)
180ml water (½ cup + 3 ½ tbsp)
corn starch for dusting
directions
ube
1. add frozen ube, unsalted butter, coconut milk, condensed milk and evaporated milk in a pan over medium heat.
2. mix ingredients together until combined and it comes to a boil.
3. turn heat to low and cook ube until it becomes thick (~2-3 hours), stirring frequently.
4. once thick, turn off heat, transfer to a container and cool in the fridge for at least 3 hours or overnight.
mochi
1. mix mochiko flour and sugar in a microwaveable bowl.
2. add water and mix until smooth.
3. cover bowl with plastic wrap and microwave for 1 minute.
4. remove and stir mixture.
5. repeat steps 3 and 4.
6. cover again with plastic wrap and microwave for 30 seconds.
7. transfer mochi on surface covered with corn starch. dust top with additional corn starch.
8. spread dough to let it cool a bit, but not completely then cut into 8 equal pieces.
9. stretch one piece out and place 1 tbsp of ube in the middle.
10. fold edges over, pinch together to seal and enjoy! :~)
