Big stores carry these often like walmart, costco, safeway, food lion to name a few. Smaller towns or citys will have a harder time finding them and some places they are just down right rare. It all depends where you live.
The chuck eye is also referred to as poor mans ribeye. The chuck roll butts up against the ribeye but when it is butchered they become separated. Its only the first 2 steaks of the chuck roll to make true chuck eye steaks. Many companies cut to many steaks off the chuck roll and they name chuck eyes instead of calling them what they really are chuck steaks. Chuck steaks are not as tender and are not chuck eyes.
Meat departments or butchers a lot of time grind them, make stew, or just leave them in roast form and sell in the counter.
Just ask your butcher, if they are good they will let you know if they have them or how long it will take them to get. Sometimes calling ahead really helps the butcher hold them aside as they can save them through out the day.
