Easy Spicy Chicken Curry / Indian Masala Chicken (Fiji Style)
Ingredients:
• 1 Whole Chicken Chopped (roughly 2 kg)
• Salt to taste
• Oil for cooking
• 1 large onion chopped
• 1 large chili chopped (chili powder to taste)
• 1 tsp turmeric
• 1/2 tsp cumin seeds
• 1/2 tsp mustard seeds
• 1 tsp fennel powder(see tip below)
• 1 tbsp paprika
• 2 tbsp grated garlic
• 1 tbsp grated ginger
• 3 Tbsp Curry Powder
Method:
1. Take a pan, put it on medium heat and heat up 3 tablespoons of oil.
2. When the oil gets hot, add your cumin and mustard seeds, give a mix and cook it for 30 seconds.
3. After 30 seconds, add chopped onions and curry leaves, give a mix and cook it for 3 minutes or until the onions have a light brown colour.
4. Now add chicken, salt to taste, chopped chilies, curry powder, paprika and turmeric, give it a good mix, put a lid on and cook it for 20 minutes, stirring once or twice during cooking.
5. After 20 minutes, add ginger, garlic and fennel powder, give it a good mix and taste your salt.
6. Put the lid back on and cook it for a further 15 minutes, stirring once or twice during cooking.
7. After 15 minutes, give it a mix and taste your salt again. Turn the heat off and garnish it with fresh or frozen coriander leaves.
8. Enjoy it with rice, roti or pooris.

Tip:
To make fennel powder, take 1 teaspoon of fennel seeds, dry roast it for 2 minutes on very low heat or until the aromas are released. Cool it down and grind it into a powder. Left over powder can be kept in a sealed container and used as required.
