Mooli paratha filling:
1 daikon, grated
To your taste add the following spices:
Salt
Red chili powder
Red chili flakes
Coarsely ground coriander seeds
Coarsely ground cumin seeds
Turmeric
2-3 tbsp ghee, butter or oil
Optional: some chopped cilantro
Dump all the ingredients into a pan (except cilantro if using). On high heat, stir fry till the daikon’s moisture dries up. The filling is done! You can add cilantro at this point if using. Allow this to reach room temperature before you fill it into the dough. Fry the paratha on a tawa/griddle at medium high heat, with butter or ghee for best results. You can use oil if you prefer. Serve hot with achar, chutney, or yogurt. I love to enjoy mine with a dollop of whipped butter on top 🤤 😋
