Audrey Saunders is arguably one of the most famous bartenders in New York. She has an impressive amount of Modern Classic cocktails to her name and I am ashamed we haven't covered her cocktails until now. She is responsible for some of the most exciting cocktail programs in New York City with bars on her roster such as the Blackbird, Bemelman's Bar and The Pegu Club.
The Intro To Aperol was created by Saunders for the Pegu Club in 2006. It's meant as a low(er) ABV drink to act as an aperitif to stimulate one's apetite and it's damned Tasty. I chose this cocktail
(in part) because so many of you have been asking me for recipes with Aperol and this is one of my favorites. So make this drink, sip and enjoy!
A little note on this recipe. This recipe is an adapted version of Audrey Saunders recipe. It omits 1/4oz (7.5ml of Simple) which is the way Sm Ross does this cocktail and I like it better that way. If you want to make the original recipe, please add 1/4oz (7.5ml) Simple Syrup. Although with modern classics I try and stick to the original makers recipe, there will be times when I stray from those specs to ones I like better. From now on I'll make sure to add the original specs in with the adapted ones.
