Zabaione, a creamy and velvety italian dessert that it's often enjoyed around Christmas.
Ingredients:
• 4 egg yolks (about 80 g)
• 80 g of granulated sugar - (1/4 cup + 3 tbsp)
• 80 g of Marsala (1/4 cup + 1 tbsp)
1. Whisk up egg yolks at room temperature with sugar using an electric whisk until the mixture is creamy.
2. At this point, you can add half the Marsala and mix again with the whisk. Once incorporated, proceed with the second half of liqueur and mix once more.
3. Now using a double boiler, start whipping the zabaione, still using the whisk, for about ten minutes until it is fluffly.
4. Turn off the heat, mix for a few more minutes then serve your hot zabaglione with cookie crumbs, or with fresh fruit, and chocolate shavings.
