another one pot meal for you today, this time with ground beef! incorporates the crowd pleasing flavors of mexican food, and is another great use for that leftover rice kicking around in your fridge. works out to max $6/serving, though I think you can probably get 8 servings out of this puppy, so that's like $4 each.

very limited clean up since it comes together all in one pot and the ingredients are super customizable based on what your family enjoys. it's also a sneaky way to hide veggies, especially zucchini if you, like me, planted too much in your garden. a girl can only eat so much zucchini bread!

Ingredients & Method
• 1T neutral oil
• 1 pound lean ground beef - $6.29
• 2 T paprika (optional) - $4.29
• 1T chili powder - $3.69
• 1T ground cumin – $2.69
• 1 small green pepper (jalapeno or the like) - $.50
• 1 red bell pepper - $2.49
• 1 white or yellow onion - $.79
• 3 garlic cloves, minced - $.70
• 1 can black beans $0.99
• 1 bunch cilantro - $1.89
• 3 medium zucchini - $1.99 (can use other veggies of your choice, including tomatoes, spinach, cauliflower – they disappear into the dish so feel free to load it up!)
• 1 jar salsa ( I used green salsa) - $3.79
• 1C leftover rice - $.50
• 1C shredded cheese $4.69
• Optional: sour cream & chips for serving

1. Dice onion and add to 1T oil over medium heat in an oven safe skillet. Cook for 3 minutes, or until translucent.
2. Add ground beef. Cook until the beef is mostly cooked through.
3. Move beef and onion mixture to the side. In the remaining oil (add 1T if none), bloom your spices. Cook for 1 minute, stirring constantly.
4. Add pepper, garlic, zucchini (or other veggies). Cook for 1 minute, being careful not to burn the garlic.
5. Stir in leftover rice and beans. Heat through.
6. Top with cheese and move under broiler until dish is heated through and cheese starts to turn golden brown.
7. Optional: Sprinkle with cilantro, serve with tortilla chips and top with dollops of sour cream, if desired.
