This classic cheesecake recipe is simple, but so delicious, creamy, smooth and rich. With a buttery, crunchy cracker crust, this cheesecake recipe is perfect every time!

Ingredients (for 4 people)
☘ The first layer (Biscuit)
10 Biscuits (80g)
Unsalted butter 30g

☘ The second layer (Cream cheese)
Room temperature cream cheese 250g
Whipped cream 35% 110g (1/2 cup)
Sour cream or plain yogurt 100g
2 Eggs
White sugar 65g
Lemon juice 1Tbsp
A pinch of lemon zest
Half a bourbon vanilla pod (or vanilla extract 1Tbsp)
Cornstarch or cake flour 1Tbsp (10g)


☘ Blueberry coulis
Blueberries 100g
White sugar 30g

* In addition to blueberries, raspberries and strawberries can also be used.
* Make sure all your ingredients are at room temperature.
* Preheat the oven to 300°F (150°C) 15 minutes in advance, bake for 60 minutes on the middle-lower racks, then turn off the heat for another hour to finish baking. After letting it cool, cover it with plastic wrap, and put it in the refrigerator for 4-6 hours before eating it!
* You can use mini cupcake pans or a 6-inch (15cm in diameter) removable-bottom cake pan.
