How many times have you sweated over doing a tall cake that is likely to slide or fall in handling or transport!This is the answer to all those cake fail queries!
The basic thing to understand is that cake is a moist and soft medium and you just cant keep adding layers and layers of cake on top of each other.Eventually the weight of the top layers is going to crumble and break the top layers,no matter how stable your frosting is.
So the key is to shift the weight of the top half of the cake on the cake board ,instead of the bottom half.This is done by adding structure inside the cake.
Whenever your cake is 6 inches high or more,divide the cake in half by adding a cake board in the center.Add vertical dowel or thick straws in the bottom tier and place the top tier on top of these.The weight of the top tier is then shifted via the middle cake board and the dowels to the cake board,which keeps the bottom tier secure and stable.
A straight dowel or skewer going through the middle of both cakes provides further security by joining the cakes together.
