Don’t be overwhelmed by the mountain mix and match leftovers in your refrigerator the day after thanksgiving. If you're like me, you like the culinary adventure of the day after thanksgiving just as much as the day it was served fresh and hot! Get creative while you have an arsenal of flavors at your beck and call.

Pull all of your ingredients out, organize your thoughts and get to work making the most ridiculous and delicious sandwich imaginable then drape your incredible leftover gravy right over the top!

Ingredients: Substitute with whatever leftovers you have
¼ Pound Leftover Turkey
1 each Brioche Bun
2 slices Butter, unsalted
2 slices Bacon, cooked
¼ Cup Caramelized onions
2 slices Provolone
2 Cups Mashed potatoes, reheated
½ Cup Gravy
¼ Cranberry Sauce
2 Sprigs Rosemary

Method:
1. Stabilize your grill for a direct cook at 450F. For this particular cook I prefer a soapstone but you could use the cast iron griddle.
2. Place your turkey on the soapstone and splash a bit of water on it to refresh and steam the meat. Butter the sliced bun and toast each side on the soapstone. Warm the cooked bacon and caramelized onions.
3. Stack the turkey to the width of the bun, top the warmed turkey with reheated onions and top with the 2 slices of provolone.
4. Transfer warmed mashed potatoes to the center of the presentation plate.
5. Spread the cranberry sauce on the toasted buns and top the bottom bun with the turkey, onion and cheese stack. Top with the top bun and stab through with the sprigs of rosemary. Place the sandwich on top of the mound of mashed potatoes and pour the gravy over the top of the entire sandwich.
