Ok, let's start doing this easy recipe. ( 4 pita bread)
We need
2 1/2cups ( 320g ) of strong flour
180g warm full-fat milk
70g of warm tap water
1tsp ( 6g ) salt
1tsp ( 6g ) sugar
1tsp ( 6g ) active yeast/dry yeast
2tbsp ( 30ml ) olive oil
Melted butter to brush the pita
1. Mix in a bowl flour and salt.
2. In a clean bowl add water, milk, sugar, and dry yeast and give it a mixt. Let if few minutes to see if the yeast is active.
3. Combine with flour. add 2 tbsp olive oil and make a dough.
4. On a countertop dust some flour and start to knead the dough. At first, it will be sticky. You need to keep continue kneading for about 10 minutes. The dough should be smooth.
5. Put the dough into a bowl coated with some olive oil, cover with a damp towel or plastic film, and let it rest for 2 hours or until is double up in size.
6. remove the dough and shape it into a rectangle piece. Roll it into a cylinder and then cut it into 4 equal pieces.
7. Form 4 dough balls and cover for 10 more minutes.
8. With a rolling pin make the pita. You can live it thicker as traditional pita are made, but I Like it more thin, good for souvlaki and Gyros.
9 Cook it into a heavy bottom skillet on medium-high heat. Around 30 - 40 seconds on each side.
10. Set aside and brush them with hot melted butter.
