All the energy of a kimchi-grilled cheese, but in pancake (jeon) form. These are truly delicious eaten right away (hang tight for a minute or so to let them cool down first!). The edges will be crisp and the centers hot and tender. But If you prefer a drier texture or want to batch-cook these ahead of time for a group (or as meal prep), follow the step of preheating the oven to drive off a bit more moisture. That’s also the best way to reheat any leftovers; that should only take about 10 minutes from fridge-cold.
