Biscuit Chicken pot pie 🐔🥧
Time: 90 mins
Serves 4 people
Pot pie filling:
4 Tablespoons butter
1 Cup diced onion
3/4 Cup diced carrot
3/4 Cup diced celery
Salt and pepper to taste
1 each bay leaf
2 springs herb like rosemary or thyme
Veggies of your choice such as mushrooms, potatoes or zucchini,
about 1 cup each
1/4 Cup all purpose flour
1/2 Cup white wine
1 ~ 1 1/2 Cups chicken stock
1 1/2 Cups half & half or 3/4 cup milk and 3/4 cup heavy cream
1 1/2 Cups cooked chicken meat from rotisserie chicken or fried chicken
Biscuit toppings:
2 Cups all purpose flour
2 teaspoons sugar
1 teaspoon salt
1 teaspoon black pepper
1 Tablespoon baking powder
1/4 teaspoon baking soda
4 oz or 1 stick of very cold butter, cubed
1 Cup cubed cheddar cheese
1/2 Cup scallion
1 1/4 Cup buttermilk or 1/2 cup yogurt and 3/4 cup milk
