CARIOCA with YEMA FILLING | CASCARON | BITSU-BITSU | KARIOKA RECIPE
Carioca recipe with a twist!
INGREDIENTS:
YEMA FILLING:
1/2 tbsp. butter/margarine
1 cup condensed milk
1 egg yolk
DOUGH:
1 cup glutinous flour
1 cup grated fresh cassava
1/4 cup water
oil for frying
PROCEDURES:
HOW TO MAKE YEMA FILLING:
1. In a pan, set in medium heat, melt the butter.
2. Add condensed milk and egg yolk. Mix well.
3. Cook and stir continuously until thicken.
4. Transfer in a plate and allow to cool.
CARIOCA DOUGH + YEMA FILLING:
1. In a bowl, combine glutinous flour, grated fresh cassava and water. Mix and make a dough.
2. Divide the yema filling.
3. Scoop 1 tbsp of the dough then flatten and add yema filling in the middle. Seal and roll into a ball shape. Do the same with the rest.
4. In a deep pan, add 2 cups cooking oil. Deep fry carioca balls until brown and crispy. Drain excess oil then serve!
