German Cabbage Soup with Smoked Sausage (or Weisskohl suppe in German). This recipe is easy to make, the ingredients are inexpensive, but the result is so satisfying. Nothing better than a hot yummy soup on a cold winter day.

4 tablespoons butter
1 medium white cabbage, chopped
1 onion, chopped
1 shallot, chopped
3 carrots, chopped
3-4 garlic cloves, chopped
1 pound smoked sausage, diced
1 pound small yellow potatoes, washed, scrubbed and chunked
8-10 cups chicken stock
1 bay leaf
1 tablespoon fresh chopped marjoram
2 tablespoons fresh chopped parsley
White pepper and salt to taste
Melt butter in a large saucepan over medium heat. Add in onions, garlic and shallots & sauté for 5 minutes.
Add in carrots and smoked sausage, cook for 3 minutes. Stir in cabbage and continue to cook, covered for 5 minutes until cabbage is wilted and soft.
Add in the potatoes, cook for another 5 minutes.
Pour in the chicken stock, bay leaf, marjoram, 1 tablespoon of chopped parsley, white pepper and salt to taste.
Simmer for 20 minutes until potatoes are tender.
