*Miang Kham เมี่ยงคำ is a traditional Northern Thai snack eaten both in Thailand and Laos. It uses betel leaves to wrap an assortment of textural and flavorful components like coconut, dried shrimp, lime, and ginger just to name a few. Traditionally, tea leaves were used but betel leaves have become iconic to this snack. Betel leaves have a scent similar to cloves and have a peppery, earthy flavor. "Miang" refers to leaves used to wrap snacks and "Kham" means tidbit/bite because each leaf wrap you make here will be one bitesize. You can translate Miang Kham to something like Leaf Wrapped Tidbit or Leaf Wrapped Bites. It's a fun snack to eat full of robust flavors and super easy to make.

INGREDIENTS
Betel Leaves - 15 - 20 leaves
*Toppings* (cubed/chopped into bitesize)
Shallots - 1/2 cup
Roasted Coconut - 1/2 cup
Red Chilis - 1/2 cup
Dried Shrimp - 1/2 cup (soaked in hot water for 10 min)
Ginger - 1/2 cup
Lime Fruit - 1/2 cup (zest & flesh)
Roasted Peanuts - 1/2 cup
*Sauce* (see video for technique)
Palm Sugar - 100g 10 (3.5 oz)
Ginger - 1 tbsp
Galangal - 1 tbsp
Roasted Peanuts - 2 tbsp
Roasted Coconut - 2 tbsp
Dried Shrimp - 1 tbsp
Water - 6 tbsp
Shrimp Paste - start with 1/2 tbsp
Fish Sauce - 1/2 - 1 tbsp
