🍽️ Ingredients:
For 1000 g of Gelbwurst:
20 % pork shoulder (200g)
30 % veal (300g)
35 % pork back fat or cheek (350g)
15 % crushed ice (150g)
Spices per 1000 g of Gelbwurst:
18g salt
1g lemon cest
0.25 g cardamom
2 g white pepper
0,5 g of mace
0.5 g ginger
3 g Cutter Phosphate (e.g BRIFISOL 414, PhosThis!, Ames Phos)
Optional: Curly or flat parsley, depending on taste
