Here's my version of a classic Filipino dish called Menudo.
Ingredients:
2 kg of pork shoulder, cubed
2 carrots, chopped (I chopped it diagonally)
1 medium tomato, diced
1 medium yellow onion
1 large potatoe (not included in video)
5 cloves of garlic
1 bay leaf
1 can of chickpeas
3 tbsp of soy sauce
2 tbsp of chicken bouillon
2 tbsp of tomato paste
1cup of water
Salt and pepper to taste
Directions:
Step 1- Set your Instant Pot to high on saute for 15 minutes. Add pork and cook until you no longer see pink. Then add the soy sauce, garlic, onions, bay leaf, carrots, tomatoes, tomato paste and your water.
Step 2- Put the lid on and set your Instant Pot to pressure cook (low setting) for 10 minutes. Release the pressure by pushing the release button and open the lid. Put the rest of your ingredients in (chickpeas, yellow peppers and chicken bouillon).
Step 3- Set your saute back to high for another 5 minutes to let the sauce thicken. Salt and pepper to taste and enjoy!
Note: I eliminated the potatoes as I am watching my carb intake. However, I did have it with a bowl
