Sourdough Focaccia is easily one of my favorite sourdough items to make as you want the dough to over proof so you are not stressing over the bulk rise being exactly right. I love making it as a pizza as it gives that Detroit Style pizza feel.
Ingredients:
100g active sourdough starter
300g filtered water
40g extra virgin olive oil
20g honey
10g salt
500g bread flour
Mix all of the ingredients, adding the flour last- see video.
You will then wait 1 hour before starting your first round of stretch and folds. You will then wait 30 mins in between the final 3 stretch and folds. In the video you see me doing some slapping folds. There are many different methods, but we are building the gluten strength so whatever method you do I just say to do it thoroughly.
Once completed the final stretching fold or coil fold you will let the dose sit 12 to 14 hours.
You will place the bowl in a 9 x 13 baking dish. Make sure that you put an oil on the bottom olive oil, avocado oil whatever it is that you prefer. We will then place the dough in the oiled pan. From here, we will pour some extra-virgin olive oil oil on top of the dough and start to dimple the oil into the dough. You will add your pizza sauce of choice. I did a simple red sauce then we will add our cheese and whatever pizza toppings your heart desires. I kept it simple and just did a pepperoni and sweet heat jalapeño. These are easily becoming one of my favorite jalapeños to use on so many things.
The biggest thing you cannot forget, and I recommend doing is spray the top of your toppings with an oil here I just used a spray avocado oil I found at Costco. If you don’t have a spray oil, you can drizzle oil on top again, and then we will want to the dimple the dough and move the oil around if you do not have a spray.
Baked this in the oven at 375°F for about 40 minutes. Ovens can vary so you will want the internal temp to be 200 to 210°F.  I would say around the 35 minute mark I would check to see where your focaccia temp.
Let this cool for about 30 minutes and then cut into it and enjoy!!
