We live in a chemical soup.
You are exposed to dangerous chemicals every single day or your life and probably multiple times per day, if not all day long.
BPA in plastic water bottles and register receipts. Phthalates in pretty much everything that smells "pretty" that isn't an essential oil. Teflon in non-stick cookware. Pesticides and insecticides in our produce and around the home. Flame retardants in our clothing, furniture and pet beds.
These chemicals, without a doubt, harm you.
High on the list are the "forever" chemicals (per- and polyfluoroalkyl substances, aka PFOS and PFOA). They are used in everything non-stick, fast food containers, stain resistant materials and even microwave bags.
They are so common that EVERYONE has them in their blood. It's just a matter of how much. These forever chemicals have been linked to pretty much every disease you can think of.
Luckily, soluble fiber in plants can help to lower the impact that these chemicals have on our bodies.
In this study (in mice), both inulin fiber (found in onion, garlic, asparagus, artichokes, chicory root and unripe bananas) and pectin (found in oranges, apples, strawberries, green beans, carrots, tomatoes) lowered the absorption of PFOS, it's buildup in the liver as well as lowered the potential for these chemicals to damage the heart and blood vessels.
