Today on Booze On The Rocks I show you How I Acid Adjust a Watermelon Margarita. This is much simpler then it sounds, in fact Dave Arnold has a basic recipe for this in his book Liquid Intelligence. STRAWBERRY SOUR (Original Recipe)
2 oz//60 ml Mezcal
.75 oz/22.5 ml Orange liqueur
.55 oz/22.5 ml Adj. Watermelon Juice***
1 Bsp/5 ml agave Syrup
Method
1. Add all cocktails to the shhaker tin.
2. Shake with ice for 15 seconds.
3. Fine Strain into a rocks glass rimmed with over fresh ice.

Adj. Watermelon Juice
The basic recipe follows thhis pattern. For every 100 ml of fluid add 4% Citric Acid and 2% Malic Acid.

@2% = 8 g Malic Acid
