Lancashire Hotpot is a mutton stew that is topped with crispy sliced potatoes.

► 600 grams of Lamb or Mutton
► 1 tsp Black pepper
► 2 tbsp of Butter
► 1/4 tsp of Salt
► 1 tbsp of Plain Flour
► 1/4 tsp of dry thyme
► 4 medium-sized Russet Potatoes
► 500 ml of lamb stock
► 1 medium sliced Onion
► 2 tbsp of Worcestershire Sauce
► 3 small diced Carrot
► 2 Bay leaves
