Ingredients:
Prepare Cabbage (Band gobi) Kofta:
-Bread slice 1
-Hari mirch (Green chillies) 2-3
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) 6-8
-Adrak lehsan (Ginger garlic) crushed 1 & ½ tbs
-Band gobi (Cabbage) 400g
-Baisan (Gram flour) 1 Cup
-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Chaat masala 1 tsp
-Haldi powder (Turmeric powder) ¼ tsp
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Ajwain (Carom seeds) ¼ tsp
-Himalayan pink salt 1 tsp or to taste
-Cooking oil for frying
Prepare Curry:
-Cooking oil 3 tbs
-Pyaz (Onion) sliced 1 large
-Tamatar (Tomato) 1 large
-Adrak (Ginger) 1-inch piece
-Lehsan (Garlic) 4-5 cloves
-Water ½ Cup or to as required
-Cooking oil 4 tbs
-Zeera (Cumin seeds) ½ tbs
-Laung (Cloves) 3-4
-Darchini (Cinnamon stick) 1
-Tez patta (Bay leaves) 2
-Hari mirch (Green chillies) 2-3
-Dahi (Yogurt) whisked 1 Cup
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Dhania powder (Coriander powder) 2 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldi powder (Turmeric powder) ¼ tsp
-Garam masala powder 1 tsp
-Himalayan pink salt 1 tsp or to taste
-Water 1 Cup or as required
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Podina (Mint leaves) chopped 1 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
Prepare Cabbage (Band gobi) Kofta:
-In a chopper,add bread slice,green chillies,fresh coriander,mint leaves,ginger garlic & chop well.
-Add cabbage & chop well.
-Transfer to a bowl,add gram flour,red chilli powder,chaat masala,turmeric powder,cumin seeds,carom seeds,pink salt & mix until well combined.
-With the help of greased hand,take small quantity of mixture (45g) & make koftay of equal sizes (makes 12-14).
-In a wok,heat cooking oil & fry koftay on low flame until golden brown.
Prepare Curry:
-In a saucepan,add cooking oil,onion & fry until light golden.
-Add tomato,ginger,garlic & cook for 2-3 minutes.
-Turn off the flame,add water,blend well & set aside.
-In a wok,add cooking oil,cumin seeds,cloves,cinnamon stick,bay leaves & mix well.
-Add green chillies & mix well.
-Add blended paste,yogurt,kashmiri red chilli powder,coriander powder,red chilli powder,turmeric powder,garam masala powder,pink salt,mix well & cook on medium flame for 4-5 minutes,cover & cook on low flame for 8-10 minutes.
-Add water & mix well.
-Add fresh coriander,mint leaves & mix well.
-Add cabbage koftay & mix well,cover & cook on low flame until oil separates (4-5 minutes).
-Garnish with fresh coriander & serve!
