Preheat oven to 400 F. Prepare pan with water for steam bath for bowl with sauce.
Ingredients:
Bacon
9 slices of smoked bacon
Pinch of sugar
For Poaching Eggs
1 liter water
300g white wine vinegar
3 Eggs
For Hollandaise Sauce
4 yolks
4 tablespoons of water
150g burnt and clarified butter
Pinch of salt
Bread
Slice of brioche or slice of toasted bread and some butter for sautéing.
For Decoration
Some sliced almonds, roasted (for decoration)
Some paprika (for decoration)
Some cream of balsamic (balsamic vinegar reduction) for decoration
