Laura's Creamed Hot Lobster
1 cup cooked lobster meat, cut into approximately 1 inch chunks
2 tbsp butter
1 cup cream
salt and pepper
fresh chives
buttered toast or mashed potatoes
Recipe Steps
Start with a hot frying pan. Laura uses cast iron. Add 2 tbsp butter and let it sizzle (but not burn) before adding 1 cup broken cooked lobster meat.
Saute the seafood for a few minutes, then add 1 cup of cream and let it bubble vigorously until it thickens. You can add more cream to adjust the consistency as desired. It should coat the back of a wooden spoon when it is ready.
Season with salt and pepper, and serve over hot buttered toast for a classic hot lobster sandwich, or over mashed potatoes. Garnish with chives.
Additional Notes
Laura served this with a simple coleslaw (shredded cabbage, carrot, and mayo) on the side to which she added capers - it was delicious, and added a light and crunchy dimension to the meal. Creamed lobster is also served locally over pan fried haddock, which is superb. Enjoy!
