Ingredients:
1 cup moong dal
3 cups water
¼ tsp turmeric
1 tsp salt
1 tsp cooking oil
2 tbsp cooking oil
1 1/8 tsp panch phoron
2 dry red chilies
1 bay leaf
½ cup onion
3 garlic cloves
½ tsp red chili
½ tsp turmeric
½ tsp coriander
½ cup cauliflower
1 carrot
½ cup green beans
1 ¼ tsp salt
¼ cup water
¼ cup frozen peas
1 tomato
1 cup water
½ tsp roasted cumin
1 tbsp ghee
2 tbsp coriander
Instructions:
1. Fry moong dal in pan until fragrant on low to medium heat for 3-4 minutes
2. Pour water in pan
3. Rinse out the water and transfer back into the pan
4. Pour water, add turmeric, salt to taste, and cooking oil
5. Cook until soft for 20 minutes on low to medium heat
6. Drizzle cooking oil in a pan, add panch phoron, red chilies, bay leaf, sliced onions and garlic
7. Stir in red chili, turmeric, coriander, cauliflower, carrot, green beans, and a splash of water
8. Saute for 4 minutes on high heat
9. Salt to taste
10. Pour water
11. Cook for 2 minutes on low heat
12. Mix in the frozen peas, chopped tomatoes, and moong dal
13. Pour water, sprinkle roasted cumin, and ghee
14. Garnish with fresh coriander
15. Ready to enjoy!
