Lightly seasoned with garlic, cumin, and cilantro, vibrant turmeric yellow Mediterranean rice is an easy 30 minute vegan side dish. Not only is it delicious, it's the perfect for meal prep and will complement your favorite entrees.
Recipe Ingredients:
1 table spoon olive oil
3 tsp butter
1 tsp minced garlic
2 cup Basmati rice
3 cups chicken broth
1 tsp turmeric
1 tsp cumin powder
1/2 tsp black pepper
1 tsp salt (If required)
Instructions
Heat butter in a large saucepan over medium heat.
Add the rice and gently stir until rice begins to lightly brown.
Add garlic, and turmeric and stir until well mixed in.
Slowly stir in chicken broth and raise heat to medium-high. Add salt and pepper if required to taste.
Bring the mix to a boil then turn the heat to low and cover the pan with a lid.
Simmer for 20 to 25 minutes. Remove from heat and add cilantro, and fluff with a fork. Serves 4.
