Steamed Chocolate Cake
Ingredients For The Cake:
Yogurt ¾ cup
Caster sugar ¾ cup
Vanilla essence 1 tsp
Oil ½ cup
Flour 1¼ cups
Cocoa powder ¼ cup
Baking powder 1 tsp
Baking soda ¼ tsp
Salt a pinch
Milk ¼ cup
To Make The Frosting:
Butter 2 tbsp
Icing sugar 1 cup
Cocoa powder ¼ cup
Cream ¼ cup
Vanilla essence 1 tsp
Method:
For The Cake, Mix the yogurt with caster sugar, vanilla essence, oil, flour, cocoa powder, baking powder, baking soda, a pinch of salt and milk. C. Put the batter in a greased and lined tin and cover with foil to prevent water from entering while steaming cake. Place the cake pan into a steamer with enough water for 40-60 minutes.
For The Frosting, beat butter, icing sugar, cocoa powder, cream and vanilla essence. Spread over cake and serve.
Cheekoo Bread Pudding
Ingredients:
Bread 8- 10 slices
Milk 2 cups
Chickoo or Sapota 6, deseeded and chopped
Almonds sliced few
Raisins 50 gm
Method:
Blend the milk and sapodilla together. Pour this over the cubed bread and add the raisins and almonds. Let this rest in the fridge for an hour so it is absorbed in well. Bake at 180 degrees C for 30 minutes. Cool and then refrigerate.
