This is a video of one of the chefs i have spent time learning from in Japan. Once again, I am so sorry for the bad video (foucs, noise, etc)... it was kind of a spur of the moment thing. I was cutting up a lot of fish and he wanted to show me a technique for larger more round fish. The knife used in the video is a Suisin INOX Honyaki 180mm Deba... I really love that knife. A lot of people talk about spending as little as possible on a deba since its just a beater knife, but i think this video shows that it is not a beater knife... having a good deba can make a big difference.
