Angaara Paneer Recipe:
For the Masala:
Dry Red Chillies - 4 nos
Cumin - 2 tsp
Coriander Seeds - 3 tbsp
Almonds - ¼ Cup
Cinnamon - 1 Stick
Green Cardamom - 3 nos
Cloves - 3 nos
Black PepperCorns - 1 tsp
For the paste:
Oil - 2 tbsp
Onions (thinly sliced) - 3 nos
Tomato (roughly cut) - 4 nos
Ginger Garlic Paste - 1 tbsp
Kashmiri Red Chilli Powder - 1 tbsp
Other ingredients:
Kasuri Methi - 1 tbsp
Curd - 1 Cup
Salt - 2 tsp
Fried Onion (powdered) - ½ Cup
Ghee - 1 tbsp
Fresh Cream - 2 tbsp + for garnish
To Smoke the paneer:
Coal - 1 piece
Ghee - 1 tbsp
Cooking Instructions:
1. Dry roast the ingredients required to make the angara masala till it is aromatic and blend it to a fine powder.
2. In a big bowl, add the paneer, the masala powder and the other ingredients required for the marination and mix it well till all the ingredients combine evenly.
3. Let the mixture marinate for about 1 hour.
4. Transfer the mixture to a pan and start cooking it on a medium flame, mixing it regularly.
5. Cover and let it cook on a medium flame for 15 minutes.
6. Place a piece of hot coal in a bowl and place it on the gravy. Add a tbsp of ghee, cover it immediately. Let it smoke for 5 minutes.
7. Transfer it to a bowl. Serve it hot.
