Gyro Meat Recipe:
1 lb ground lamb
1 lb fatty ground beef (ideally 20-30% fat)
2-3 tsp salt
1/2-1 tsp black pepper
1 tsp dried rosemary
2 tsp oregano
1.5 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 Tbsp parsley
1 egg
Add all ingredients to a food processor and pulse until starting to combine. Turn on the food processor and let it run until the mixture because a sticky and cohesive meat paste.
Spread this mixture on parchment paper on a baking sheet and bake at 375F until reaching an internal temperature of 140F. This should take around 40-45 minutes, but ideally use a thermometer to check.
Slice the gyro meat into thin strips, add the strips to an air fryer on the highest setting, and air fry for 4 minutes to get crispy edges. Alternatively place under a broiler for 1-3 minutes until edges are beginning to brown and crisp.
Serve immediately.

Tzatziki Sauce:
1/4 cup diced cucumber (peeled)
1 and 3/4 cup whole milk Greek yogurt
1/2 tsp salt
1/2 tsp white pepper
1/2 tsp garlic
Add into pint mason jar or other container of choice. Blend with stick blender until well combined and smooth. Refrigerate until serving.p
