Ingredients:
½ kilo Rice(dosa rice)
Grind to a fine powder
Roast the flour on low flame for 15min
Keep stirring to avoid burning
Transfer to a large bowl & cool
Grind 10 Dry Chilies (soaked 1hour)
50gm Butter/Hot oil/Hot Ghee
Salt
2 tbsp Ground Pepper
¼ tsp Hing
3 tbsp Chana Dal(1 hour soaked)
Ground chilli Paste
Combine well
3 Sprig Curry leaves
Sufficient water for soft & smooth dough
Lemon size dough
Spread to small disc on dry cloth
Keep making the small discs on cloth
Let it dry for 15 min
De-mould with a flat spoon
Do not de-mould with hand
Transfer to a plate
Drop-in hot oil
Fry only a few on High Flame
Do not insert spoon for 1 min
Gently flip & fry to golden
Cool in colander & store in an air-tight jar
