Vegan Brownies Recipe
Ingredients:
• 1 Tbsp ground flaxseed
• 3 Tbsp water
• 1 cup all-purpose flour
• 1 cup organic cane sugar
• ½ cup unsweetened cocoa powder
• ¼ cup unsalted, vegan butter melted and cooled (I use Earth Balance Vegan Cooking & Baking sticks)
• 1 teaspoon vanilla extract
• ½ teaspoon baking powder
• ¼ teaspoon salt
• ½ cup semisweet vegan chocolate chips (I use Enjoy Life Mini Chips)
• 3/4 cup non-dairy milk
Directions:
Preheat the oven to 350 degrees F (175 degrees C). Line a square 8-inch by 8-inch pan with parchment paper.
Make the flax eggs: In a small bowl, mix the ground flaxseed with 3 tablespoons of water. Set aside for 10-15 minutes
In a large mixing bowl, stir together the flour, sugar, cocoa powder, baking powder, salt.
Melt the vegan butter in the microwave at 30 second intervals. In a separate mixing bowl, stir in all the wet ingredients, including the melted butter, flax eggs, vanilla and non-dairy milk – until well-blended.
Add the dry ingredients to the wet ingredients and mix well. Fold in the vegan chocolate chips.
Slowly pour the batter into the pan and spread evenly. Place the pan on the middle rack in the oven. Bake for 25-30 minutes, depending on your oven. Avoid overcooking the brownies as they can become crumbly.
Remove the brownies from the oven and let them rest in the pan for 1 hour. Flip the pan over on a wire rack and let the brownies cool completely before cutting into squares.
Slice into 9 equal-sized portions and enjoy!
