Lemon Posset 🍋
I made two servings, my bowls hold around 150ml of liquid. You can use smaller ramekins and divide into 4 portions.
Ingredients:
300ml heavy cream/double cream
80g white sugar
Zest of 1 lemon
2 Tbsp fresh lemon juice
1/2 Tsp vanilla essence
Method:
1) Pour cream into a pan and add the sugar, lemon zest and vanilla essence. Mix well.
2) Heat up cream over a low heat, enough to simmer and keep stirring until the sugar dissolves.
3) Continue to cook until the cream turns yellow. Should resemble the colour of butter.
4) Remove from the heat and allow to cool for around 5 minutes.
5) Add in the lemon juice, stir continuously until a smooth and thick consistency is formed. The cream should thicken almost immediately after adding the lemon juice.
6) Once a nice smooth consistency pour into ramekins and leave to chill in the fridge for at least 2 hours or overnight.
